Stefano Canosci is an unconventional pizza chef. Tuscan from Sansepolcro and cosmopolitan for life and professional experiences, he was born a barman, moved to the dining room and the kitchen (even in haute cuisine), to then retire to the Sienese area and devote himself to dough and leavening.

His pizza is characterized by the dough: well matured, soft and crunchy at the same time, consistent and light, tasty and with character, well cooked in a wood oven.
